a colourful professional history – having
started his training in 1991 and from there, worked his way up the
ranks in various restaurants and top hotels all over the globe. To
name but just a few, he has held the following positions: Executive

Chef at Alexander Forbes, Director’s Table in Gauteng --2000-2001
Executive Chef of the Sheraton Hotel and Towers in Pretoria --2001-2003.
Completely at ease in the kitchen, this
young professional speaks passionately about his background and devotion
to art of cuisine. “I never really thought about becoming a chef – it
was just something that came naturally to me – something that
I have always enjoyed from a very young age. Its my life, I continuously
strive for
the best and am very rarely satisfied.” Talking
about the type food he most enjoys preparing, Desmond says, “I
enjoy working with pure and fresh items like fresh pastas, colourful
vegetables and matured cheeses – just some of my favourite ingredients.”
Piccolo Mondo's seafood menu includes
Mozambican prawns, lobsters, langoustines, mussels, oysters, crab,
clams, calamari and
Norwegian salmon. Order from
the Mediterranean style à la carte menu or opt for a three-course
set menu. All meals are complemented with the pick of South Africa's most commended
wines. |
